Holiday Baking

Hey everyone! Since it is Christmas week, Adelyn and I decided to do a little baking. I wanted to share one of my favorite peanut butter cookie recipes with all of you. This is a family recipe and I make these every single year because they are so easy and delicious! Adelyn had so much fun helping this year!

Here's what you will need:

1/2 cup shortening

1/2 cup peanut butter

1/2 cup sugar

1 egg

1 1/4 cup flour

1/2 teaspoon baking soda

1/4 teaspoon salt

First, soften the shortening and peanut butter in a microwaveable bowl. Then, add the sugar, egg, flour, baking soda and salt. Next, chill dough for approx. 5-10 minutes. Roll into balls. I like to lightly coat them in a bowl of sugar and then place on baking sheet. Use a fork and press down to create a crosshatch pattern. Bake in preheated oven at 375 degrees for approx. 10-12 minutes. Let them cool. I like to place a chocolate Hershey's kiss on top after they cool for a few minutes. I hope that you enjoy!
